
Monday night. After a long, sleepy first day back at work, how much energy do you have left by the time dinner rolls around? I’m a practical cook – I keep 2 or 3 recipes in my back pocket that are so stupidly simple I can still manage a good dinner after an *especially* painful Monday.
Spicy chicken is exactly what it sounds like. Baked chicken tossed in 4 simple spices, cooked in 25 minutes and with no cleanup. Seriously, no cleanup.
I’m always hesitant with baked chicken recipes as they often turn out dry, but this one has stood the test of time by staying juicy with every bake. Given that this is my go-to no fuss dinner, I usually keep my side dishes simple with this meal; roasted butternut squash or a quickly steamed fresh veggie and Uncle Ben’s microwavable Basmati rice (salted & buttered). All of these are quick to cook and even quicker to clean up.

Ingredients
2 chicken breasts
2 tbsp brown sugar
½ tbsp garlic powder
1 tsp oregano
½ tsp cayenne pepper*
½ tsp paprika
Salt & pepper to taste
*Not a fan of cayenne? Use 1 tsp of paprika instead
Instructions
- Preheat oven to 425º F
- Combine spices in a gallon-sized zip lock bag, mix together well
- Add chicken breasts, seal and shake until chicken is coated
- Cover a shallow baking pan with tin foil and coat with cooking spray
- Add chicken to pan and bake for 24 minutes
