I’m a big fan of homemade spice mixes. Not only are they easily customizable, but you know what goes into it so you don’t need to worry about funky ingredients being mixed into your food. One of my staples is Cajun Spice. It packs a punch by itself, but when used to season meat or sprinkled into a dish as an accent it adds a new complexity to any meal.
The below recipe is a key ingredient in my Jambalaya recipe, used to season the shrimp (and then the entire pot of jambalaya).
Ingrediants
1 tsp salt
1½ tsp garlic powder
1¼ smoked paprika
½ tsp black pepper
½ tsp onion powder
½ cayenne powder
¾ tsp oregano
½ tsp red pepper flakes
Preparation
Mix together and store in a sealed container if not all used in a single serving.
